Filipino Style Spaghetti

Filipino Style Spaghetti

Recipe:

1      kg. spaghetti noodles
1/2   kg. ground beef
1/2   kg. ground pork
1/4   kg. hotdogs, diagonally sliced
1      kg. tomato sauce
3      pieces laurel leaves (bay leaves)
1/4   cup brown or white sugar
2      green bell peppers, diced
2      onions, chopped
1      head garlic, minced
3      tablespoons of cooking oil
1      cup of water
        Salt and pepper to taste
1/2   cup grated cheese


Procedure:

Cook spaghetti noodles according to package instructions.
In a sauce pan or wok, sauté garlic and onions in cooking oil.
Add ground beef, ground pork, laurel leaves, bell pepper and a cup of water.
Bring to a boil and let simmer for 10 minutes.
Add tomato sauce or combination of banana catsup and tomato sauce,
salt and pepper to taste then let simmer for another 10 minutes.
Add brown sugar and hotdogs. Continue to simmer for an additional 5 minutes. 
Tabasco for more spice if desired.
Serve with the cooked spaghetti noodles and grated cheese on top.

Recipe:

8        Ounces Pansit
1/4     Cup Peanut Oil
2        Cloves Garlic -- finely chopped
1/2     Pound Pork -- julienned
3        Medium Lopchong -- sliced
1        Large Yellow Onion -- chopped
1        Cup Napa Cabbage -- chopped
2        Tablespoons Soy Sauce
1 1/2  Cups Chicken Stock
2        Tablespoons Fish Sauce
1        Large Leek -- chopped
1        Tablespoon Annatto Oil -- (optional)
          Fresh Cilantro -- garnish


Procedure:

Soak rice noodles in tepid water about 10 minutes.
Meanwhile, place 2 tabs peanut oil in hot wok. Add garlic and pork.
Saute until pork is done, add sausage, onion and cabbage.
Stir fry 3 minutes. Add all but noodles & cilantro, stir fry 5 minutes.
Add noodles, stir fry until noodles are tender NOT soggy.
Place in large bowl and garnish.

Recipe:

3      Pounds Chicken -- cut into 6 pieces
1/2   Pound Pork -- cut into strips
        Salt And Pepper -- to taste
1/2   Cup Corn Oil
2      Teaspoons Annatto Powder -- or paprika
1      Tablespoon Garlic -- finely chopped
1      Large Onion -- finely chopped
1      Cup Tomato Sauce
6      Large Potatoes -- peeled and quartered
1      Stick Pepper -- chopped
4      Cups Water
1      Small Bell Pepper -- chopped
2      Cups Peas
3      Cups Rice -- cooked
1/2   Cup Pimiento Stuffed Olives
3      Medium Hard-Boiled Egg -- sliced


Procedure:

Season pork and chicken with salt and pepper. Fry in oil until brown on all sides. Remove and set aside. Add anatto powder, garlic, onion and tomato sauce. Simmer until you get a saucelike consistency. Add potatoes, pepperoni and water. Cover and bring to a boil. Stir and reduce heat to low. Add bell peppers and peas. Simmer for 15 minutes. Add rice, pork, and chicken to the pot. Mix until well blended. Cook until mixture becomes dry. Serve on large platter garnished with olives and egg.

3      Pounds Chicken -- cubed
1      Clove Garlic -- finely chopped
1      Small Onion -- finely chopped
6      Ounces Tomato Sauce
1      Medium Bay Leaf
2      Teaspoons Pepper
2      Teaspoons Salt
1/4   Cup Water
2      Medium Potatoes -- cubed
4      Ounces Pimientos


Procedure:

Simmer chicken, garlic, onion, tomato sauce, bay leaf, pepper, salt and water for 15 minutes. Add potatoes and pimentos. Simmer for 15 more minutes and serve. 

Binagoongang Baboy

Recipe:

2       lbs Pork loin, cut into small cube
1/2    cup Balsamic vinegar
1/2    cup Bagoong fish paste
4       cloves Minced garlic
8       Peppercorns


Procedure:

Place pork cubes, peppercorns, and garlic in a medium sized, shallow container for 24 hours. 

Place the contents, along with the bagoong, an marinade into a large saucepan, or deep wok, then cook over medium heat for about 45 minutes, checking periodically to make sure the pork isn't burning, or too dry, if so, you may add a little water. 

Ginisang Munggo

Recipe:

1         lb Large shrimp
2         cups Dry mung beans
1         Yellow onion, peeled and sliced
2         tbsps Peanut oil
2         cloves Sliced garlic
4.1/2   cups Chicken soup stock
1         Thin slice of fresh ginger
1         tsp Salt
1         tsp Freshly ground pepper


Procedure:

Soak beans overnight, then hull them by rubbing them in your hands, scoop out the hulls from the container, then rinse the beans.

Add peanut oil into a large preheated saucepan, and stir fry your yellow onion and garlic, then add your chicken soup stock and your slice of ginger.  Bring the lot to a boil, reduce heat, cover, simmer for 20 minutes, remove your ginger, then continue cooking for about 10 minutes. 

Add shrimp, salt and pepper, and cook for another 6 or 7 minutes, allowing the shrimp to absorb the flavor.

Beef and Pork Sinigang

Recipe:

2       lbs Beef, cut in pieces
1/2    lbs Pork, cut in pieces
2       Ripe tomatoes
3       Chopped radishes
1/2    cups Tamarind fruit
2       cups Kangkong leaves
8       cups Rice Water
1/4    tsp Patis
1/2    tsp Fresh ground pepper


Procedure:

Place tomatoes and tamarind into a saucepan with the rice water, bring to a boil, add beef and pork, be sure to remove the skin and seeds from the tamarind once it has softened.  You can then add the rest of the ingredients, and cook for 20 minutes.  Serve seasoned with patis and freshly ground pepper.

2       lbs Ground pork meat
1       pkg Lumpia wrappers
1/2    lb Finely chopped onions
1/2    lb Finely chopped carrots
-       Vegetable oil (as needed)
1       cup Raisins
2       Eggs
1       tsp Salt
1       tsp Freshly ground pepper


Procedure:


Mix your ingredients in a bowl, take large spoonfuls and roll then in your wrappers.  Deep fry the Lumpia in vegetable oil until golden brown.

Serve with sweet and sour sauce, or your sauce of choice

Daing Na Bangus

Recipe:

1       kg Bangus (Milkfish) cleaned
1/4    cup Coconut vinegar
2       Serrano peppers
1/2    tsps Salt
1/2    tsps Ground pepper
2       cloves Crushed garlic
1/3    cup Peanut oil


Procedure:

Cut your fish lengthwise along the back, taking great care in not breaking the skin. The place the fish skin side down in a a wide and shallow container.   Add vinegar, peppers, garlic, salt and ground pepper, and let marinate in your refrigerator for 24 hours, turning the fish over after the initial 12.

To prepare, drain, and fry with oil in a large skillet for 5 or 6 minutes, or until the fish reaches a golden brown color.

Serve over steamed rice.

2          lbs Thinly sliced beef
1          head Macerated garlic
3/4       cup Distilled white vinegar
1/4       cup Sugar
1          tbsp Salt
1          tbsp Freshly ground pepper


Procedure:

Marinate the meat in the ingredients for at least 12 hours, then sun dry the slices. 
These are best served fried.

Recipe:

1        oz Pkg of double crust pastry
3        cups Ground Beef
1        tbsp Olive oil
2        tbsp Minced garlic
1/4     cup Very finely minced onions
1/4     cup Minced tomatoes
1        cup Chopped hard-boiled eggs
1        cup Finely chopped sweet pickles
1        tsp Salt
1        tsp Freshly ground pepper


Procedure:

Flatten the pastry dough and cut into 4-inch squares.

Saute the ingredients  in a skillet, minus the pickles and eggs, and cook for about 25 minutes, until the beef is completely cooked.  Drop in your eggs and pickles, blend them in thoroughly.  Add salt and freshly ground pepper to taste.  You may also want to include some hot peppers such as chipotle, or jalapenos. 

Leave your mixture to cool for 1/2 hour, then drop large spoonfuls onto the pastry squares, fold into a triangle, wet edges with water, and use a fork to seal them.

bake the empanadas on a cookie sheet for 30 minutes in an oven pre-heated at 400º

Pork Puchero

Recipe:

2       lbs Pork butt or shoulder, cut into small cubes
1       oz Thinly sliced pepperoni
4       Chopped  green onions
1       Celery stalk
1       head Cabbage
2       Potatoes, cut into small cubes
1/4    lb Green string beans
1       Chopped green pepper
2       tbsps Vegetable cooking oil
2       cloves Crushed garlic
1/2    cup Tomato sauce
1       cup Garbanzo beans
2       tbsps Salt


Procedure:

Put your meat in a large pot filled with boiling water.  Reduce heat and steep for at least two hours so the meat can achieve the right tenderness.  Remove the meat from the pot and add green beans, potatoes, and cabbage. 

Saute your celery, green pepper, onions and garlic in oil using a medium saucepan, add tomato sauce,  then simmer for a few minutes so the flavors can mix.  Add some pork broth from the previous pot, and the chickpeas.

Serve in deep dishes, on steamed rice, and garnish with Pepperoni slices.  Pour the tomato sauce over the meat and vegetables.

Recipe:

1/2     kilo of pork shoulder, cut into squares
1/8     teaspoon of salt
1        spoon of soy sauce
2        spoon of cornstarch
          cooking oil
1 1/2  teaspoon of soy sauce
3        spoon of vinegar
1/4     cup of sugar
6        spoon of ketchup
1        spoon of water
1 1/2  teaspoon of Worcestershire sauce
1        teaspoon ng cornstarch
1        spoon of cooking oil
1/4     teaspoon of crushed garlic
1        piece of onion, sliced
1        piece of red chile, sliced sidelong
1        piece of green chile, sliced sidelong
          pineapple tidbits


Procedure:

Saturate the pork with salt, soy sauce and cornstarch for 10 minutes. Roll it in the cornstarch before frying until it reddens.

In a bowl, combine the soy sauce, sugar, ketchup, water, Worcestershire sauce and cornstarch. Then, set aside.

In a pan, saute the garlic, onion and chile. Add the mixed ingredients. Let it boil then combine the pork. Cook until curdled. Decant in a platter and put some pineapple tidbits.

Recipe:

1/2     kilo of squid
1/4     cup of water
1/2     cup of vinegar
1/2     teaspoon of pepper
5        small garlic, crushed
2        spoon of cooking oil
1        small onion, sliced
2        tomato, sliced
          salt and sugar for flavoring


Procedure:

Clean and rinse the squid. Don't remove the ink. Boil the squid with water, vinegar, pepper, salt and garlic. Cover the casserole and let it soften. Strain it and seperate the garlic. Put aside the sauce.

In a frying pan, saute the garlic in a hot cooking oil. Add the onion and tomato and let it soften. Add up the squid and the set aside sauce. Season it until the sauce becomes little in quantity.

Procedure:

Heat the cooking oil in the casserole and saute the garlic. Pour the soup of chicken and let it boil. Mix the noodles until it becomes soft. Add the chicken and season it according to your taste.

1     kilo of chicken, cut into pieces
1/3  cup vinegar
2     spoon of crushed garlic
1     crushed piece of laurel leaves
2-3  spoon of soy sauce
       salt
1/2  teaspoon of pepper
1     cup of cooking oil



Procedure:

Mix the chicken, vinegar, garlic, laurel leaves, soy sauce, salt, and pepper in casserole. Let it boil and wait until the chicken is tender. When the chicken is already tendered remove it from the sauce.

In sperate casserole, saute the garlic, and put the tendered chicken until it cooks, and mix the sauce.
